Prawn and courgette linguine
This one is a recipe for all of the seasons. Jam packed full of flavour, use our ready dusted prawns to make a super simple, yet delicious dish in under 10 minutes. How's that for the perfect mid-week dish!
Ingredients
1 x 150g bag of dusted Dockside garlic and herb prawns
1 courgette, thinly sliced
175g linguine
2 tbsp olive oil
Grated zest and juice of 1/2 lemon
1 tbsp freshly chopped parsley
Ground black pepper
5 x cherry tomatoes
Preparation
Step 1
Heat a non-stick pan over a high heat. When hot, add the courgette slices and cook for 5 minutes, turning once until golden. In a saucepan, cook the linguine according to the packet instructions.
Step 2
Add 1 tbsp of olive oil to a frying pan over a medium heat. Add your dusted prawns and lemon zest and heat through for 3 minutes. Add the lemon juice and your courgettes and heat for a further minute.
Step 3
Drain the pasta, add the prawns and courgettes, and sprinkle in the parsley. Add in 5 cherry tomatoes and the remaining olive oil and simmer on a low heat for 1 minute. Toss well and serve immediately.
