60-Minute Fish Pie

We call this dish 60-Minute Fish Pie, but don't worry—it doesn’t actually take that long to prepare! After the initial preparation of our scrummy Fish Pie Mix, you can throw everything in the oven and put your feet up until teatime.

Ingredients

1 Portion of Fish Pie Mix
1kg Potatoes
25g Butter
25g Flour
400ml Milk
2 Teaspoons of English mustard
15g Chives
100g Red Leicester
100g Sweetcorn
100g Peas

Preparation

First off, preheat your oven to either 200°C or gas mark 6. Peel and half all your potatoes placing them in a filled saucepan as you go. When all your potatoes are in the pot, bring it to the boil before simmering until the spuds are tender. Drain the pan and mash the potatoes up, adding a dash of milk and butter.

Put all of your flour and the rest of your butter into a smaller pan and cook for 1-2 minutes, stirring regularly. Whisk in your milk and continue to whisk everything while you bring it all to the boil. It should take around 3 minutes for the butter to thicken.

Take off the hob and stir in your Fish Pie Mix, mustard, chives and veg before pouring everything into an ovenproof dish. Now add the mash and sprinkle your cheese on top, and oven cook your fish pie for about 20 minutes (or until it’s golden brown).
