As students settle in to University life, making new friends, partying and trying out all social groups going, food tends to take a back seat... well, good quality food.

Take-aways and microwave meals, although quick and easy, are not your friend. They aren't providing you with the right nutrients that you need to keep your sleep deprived body going through the lectures and busy social lifestyle that you have become accustomed to and your bank balance will start heading in the wrong direction within weeks.

This recipe is super cheap, super simple and a super one-pot sharer...

 

Ingredients

2 garlic cloves, roughly chopped

Dried chilli flakes

1 onion

3 tins chopped tomatoes

1 bunch fresh basil OR 1tsp dried oregano

Salt

Pepper

2 tins tuna

Fusilli pasta OR penne if you prefer

Mature cheddar cheese

 

Method:

01. Peel and chop your onion and garlic.

02. Place your pan on the hob and heat over a medium - high heat. Add you oil, onion, chilli flakes and garlic and cook for about 6 minutes until soft.

03. Turn up the heat and add your tinned tomatoes.

04. Tear your basil leaves off the stalks and add to the sauce. Bring to the boil and simmer for about 15-20 minutes.

05. Meanwhile, place your pasta in a pan of water and bring to the boil. Cook for about 12 minutes and then set aside.

06. Drain your tuna and add to the sauce. Add a little salt and pepper.

07. Drain your pasta and add to the sauce. Toss to coat and then transfer everything in to an oven proof dish.

08. Grate your cheddar cheese and sprinkle over the pasta.

09. Sprinkle with a little salt and pepper and drizzle with a little olive oil.

10. Pop in the oven (180 degrees) and heat for about 15 minutes, until bubbling and golden in colour.

11. Remove from the oven and plate up.

12. Tuck in and enjoy!

This can be served on its own or with a salad or garlic bread.
