Cooking fish on the bbq adds a beautiful salt in the air, sand in your toes type of feel. There are so many recipe's that can be recreated on a bbq but here are two bbq seafood snacks that we have thrown together for a sunny Fish Friday.

 

Italian Style Prawns

Ingredients

2tsp Extra Virgin Olive OIl

2 garlic cloves, crushed

Mint leaves, chopped

Raw Prawns (about 450g)

50g breadcrumbs

Lemon wedge, to serve

Method

01. Mix your olive oil, mint leaves and prawns in a bowl and season. Leave to one side to marinate for about an hour.

02. Thread your prawns on to skewers. Shake off any excess marinade and dip into the breadcrumbs.

03. Place the skewers on to the BBQ tray and grill for about 2 minutes each side - until the prawns are pink and the breadcrumbs golden.

04. Tuck in, enjoy!

 

Sardines with crisp paprika crumb

Ingredients

5-6 sardines

2 garlic cloves

1 slice of bread - blitz to breadcrumbs

1tbsp olive oil

1 tsp paprika

Chopped fresh parsley

Lemon or lime wedge to serve

 

Method

01. Season the sardines.

02. BBQ for about 5 minutes until cooked through.

03. Fry off the garlic, breadcrumbs, and paprika. Stir until the crumbs are crisp then add the parsley

04. Scatter over the sardines

05. Tuck in, enjoy!
