It's Taco Tuesday BUT can you really beat a Burrito?

Cod Burrito

Ingredients

Cod fillets
2tbsp Olive oil
2tbsp Lime juice
1/2 tsp Ground cumin
1/2 tsp Chilli powder
Tobasco sauce (to taste)
Salt & Pepper
1 medium onion, finely chopped
1 green pepper, cut into thin strips
1 cup grated cheddar cheese
2 cups shredded lettuce
1/2 cup tomato salsa
Tortilla wraps, warmed

Method

To cook:
01. Preheat the oven to 180 degrees.
02. Line a baking sheet with parchment paper.
03. Cut the cod into strips and set on the baking sheet.
04. Combine the oil with the lime juice, cumin, Tobasco and chilli powder in a bowl.
05. Brush your mixture over the fish and season with salt and pepper.
06. Place the onions and peppers around the fish and cook for around 12 minutes, until cooked through.

To serve:
01. Warm your tortillas in the oven for about 30 seconds.
02. Portion out your fish and add to each tortilla wrap.
03. Add the onions and peppers and top with the cheese, lettuce and salsa.
04. Fold each end of the tortilla and roll into a pancake.
05. Cut each wrapped tortilla in half and serve.
06. Tuck in and enjoy!

Cod Taco's

Ingredients

Cod fillets
1/2 cup Sour cream
1/3 cup Mayonnaise
1 tsp Garlic powder
1/2 tsp cumin
1/2 tsp cayenne pepper
Salt & Pepper
2 tbsp Lime juice
1 tsp Sriracha spice
Corn tortillas
Cheddar Cheese / Feta cheese

Method

To cook:
01. Line a baking tray with parchment paper.
02. In a bowl, mix together the cumin, salt and pepper, cayenne pepper.
03. Evenly sprinkle the seasoning over the fish.
04. Lightly drizzle the fish with olive oil and top each piece with a dot of butter.
05. Bake in the oven at 180 degrees for about 20-25 minutes.
06. Combine all of the ingredients together to make your taco sauce - Sour cream, Mayonnaise, lime juice, garlic powder, Sriracha. Give it a good mix.

To serve:
01. Warm the corn tortillas in the oven for about 30 seconds.
02. Add your fish and then the remaining ingredients, finishing off with a sprinkle of cheese and the taco sauce.
03. Serve with a lime wedge (feel free to squeeze extra lime over the taco).
04. Tuck in and enjoy!
