Midweek meals call for quick, delicious recipes.

Check out this Lemon Sole with a parmesan and Cream sauce. It's so simple to cook, requires very few ingredients but is super tasty.

 

Ingredients

1 tsp butter
 
Lemon Sole, skinned and filleted

1 lemon, juiced

Grated parmesan

2 tbsp fresh parsley, chopped

200ml double cream

1 garlic clove, roughly chopped

 

Method

01. Melt the butter in a frying pan until bubbling. Add the garlic and fry for about 2 minutes.

02. Add the lemon sole to the pan, squeezing over the lemon juice. Season with salt and pepper.

03. Pour over the cream and sprinkle with parmesan. Cook gently for about 5-6 minutes remembering to turn the fish halfway through cooking.

04. Plate up the sole, add some sauce on top and serve.

05. Best served with Fresh greens or a nice crisp salad.
