The countdown has begun, Christmas is just around the corner. What have you got planned over the festive period?

Friends round for dinner, entertaining the family and don't forget... quick meal ideas for the kids whilst they're off school.

Here's a recipe that ticks all of those boxes, it's a real cracker.

 

Ingredients

4 avocados
8 eggs
Salt and Pepper
Chilli flakes
Fresh Dill
4oz smoked salmon

 

Method

01. Preheat the oven to 220 degrees.
02. Halve the avocados, remove the stone. If the hole is small, scoop out a little avocado so that the hole looks big enough for an egg to sit in it.
03. Arrange the avocados on a baking tray. Line the hole with strips of smoked salmon.
04. Crack each egg into a small bowl, then spoon the yolks and a little white into the avocado.
05. Season with salt and pepper.
06. Place your tray into the oven and bake for around 15-20 minutes.
07. Sprinkle with chilli flakes (optional)
08. Plate up. Tuck in, enjoy!
