Those plans you had to go out for dinner tonight, cancel them!

This stormy weather calls for a cosy night in and home cooked food. Friday nights were made for food like this.

 

Ingredients

1 bay leaf

2 black peppercorns

50g butter

850 ml milk

800g smoked haddock

1 leek, sliced

1 tsp wholegrain mustard

3 tbsp plain flour

150g cheddar cheese

1 kg maris piper potatoes

50g butter

100ml milk

2-3 tbsp breadcrumbs

 

Method

01. Heat the oven to 160 C (fan oven). Heat the milk, bay leaf and black peppercorns in a pan. Add the fish and cook for about 10 minutes.

02. Remove the fish and discard the skin. Let the liquid cool and then strain. Keep 500ml of the strained liquid to one side.

03. Melt the butter in a pan and add the sliced leek. Cook for about 5 minutes and then stir in the flour and cook for a further 2 minutes. 

04. Add the mustard.

05. Gradually pour in the poaching liquid, keep stirring until you have a smooth sauce.

06. Add the cheddar cheese and stir.

07. Add chunks of the fish in to a large pie dish, pour over the sauce.

08. Boil your potatoes for about 15 minutes. Mash with butter and milk and then season.

09. Spoon your mashed potato over the fish and sprinkle over the breadcrumbs.

10. Bake in the oven for 35-40 minutes.

11. Plate up. Tuck in, enjoy!
