Ingredients

150ml pot natural yoghurt, low fat

3 tbsp tikka curry paste

Olive Oil

1tsp turmeric

3 Salmon fillets

1 large red onion, finely chopped

Fresh coriander

Green Chillis (optional)

Rice to serve (or add into the curry whilst cooking)

Method

01. Mix together 1tbsp of the curry paste and the yoghurt. Season the salmon fillets and then cover with the paste, set aside.

02. Heat the oil in a large pan, with a lid. Add the onion to the pan and cook for about 5 minutes until soft. Add the remaining curry paste mix and cook for 1 minute.

03. Add the turmeric and rice, season with salt and pepper and then give it a stir.

04. Pour in 800ml of water from the kettle and bring to the boil.

05. Simmer for about 15 minutes. Cover with the lid and lower the heat so that it is gently simmering and cook for another 15 minutes.

06. GIve the rice a good stir and then add your salmon pieces. Re-cover the pan and turn the heat right down to the lowest setting and leave it simmering for about 15-20 minutes.

07. Sprinkle over some fresh coriander and add chillis if required.

08. Tuck in, enjoy!
