Lime, Cashew and Chilli cod with chips
We've given the classic family favourite a bit of a modern twist this Fish Friday. We're nuts about this recipe, be sure to let us know what you think.
Ingredients
1/2 cup Plain flour
1/3 cup Milk
2tsp grated lime rind
Fresh breadcrumbs
1 egg
Blitzed unsalted cashew nuts
Olive Oil
1tsp chilli flakes
Lime wedges
Boneless white cod fillets
Method
01. Place the flour in a bowl. Whisk together your egg and milk and set aside.
02. Combine your cashew nuts, lime rind, breadcrumbs and chilli flakes and leave in a bowl.
03. Dip your fish fillets in to the flour, then the egg mix and then completely coat with the breadcrumb mix.
04. Pre-heat your oven to 200 degress (180: fan). Line your baking trays with baking paper and add your fish to the trays.
05. Add a little spray of oil to your fish and cook for around 15 minutes, turning once, until your fish is golden in colour.
06. Serve with home cooked chips and lime wedges.
