The stereotypical fresher's diet? Take-out pizza, curries and Chinese on speed dial, and failing that beans on toast.

Well yes, there is truth in this and let's face it, we've all been there. BUT, times are changing. We are all a little more conscious about the types of food we are eating and the lifestyle we choose to live.

With this in mind, we have put together a really simple cod recipe that has a bit of spice, a bit of zest and a little bit of booze... you can't get much fresher than that!


Ingredients

Cod Loin

1 lemon

1 small glass of wine

1 tsp chilli flakes

Pinch of smoked paprika

Pinch of cayenne pepper

Salt and Pepper

1 fresh chilli


Method

01. Preheat the oven to 200 degrees.

02. Slice the lemon and place on a sheet of foil.

03. Season the cod with salt and pepper and sprinkle both sides with the cayenne, paprika and chilli flakes,

04. Slice the chilli in half and lay on top of the cod.

05. Place the cod on top of the sliced lemons in the foil.

06. Make a parcel but leave one end open.

07. Tip the wine in to the parcel and seal.

08. Bake in the oven for 20-30 minutes (depending on how thick the cod loin is)

09. Remove from the oven, remove from the foil and plate up. Serve with veg and potatoes.
