What better way to kick off British Pie week than with a home-cooked Fish pie!

Ingredients

1 cup milk
450g of our Frozen Pie Mix (Pink Salmon, Pollock, Smoked Haddock)
1 cup fish stock
1 leek, finely sliced
1 bay leaf
2 ounces butter
Salt and pepper
2 ounces flour
1 tbsp fresh parsley, roughly chopped
4 large potatoes
A handful of grated cheese

 

Method

01. Heat the oven to 180 degrees.
02. Pour the fish stock and the milk into a saucepan and simmer.
03. Add the fish pieces and the bay leaf to the pan and poach for about 5 minutes.
04. Remove the fish from the pan and put to one side.
05. Melt the butter in another pan over a medium heat then add the leeks and cook until they are soft (about 5 minutes).
06. Add the flour and stir to mix.
07. Pour the fish juice from the first pan into the second pan and stir to mix. Turn the heat up and cook for about 3-4 minutes until the sauce is slightly thickened.
08. Remove from the heat. Take the bay leaf out of the pan and then add the poached fish, parsley and season with salt and pepper.
09. Place the fish with its sauce into a casserole dish and cover with a thick layer of mashed potato. To make it look professional, pipe the potato with a piping bag.
10. Sprinkle with the grated cheese and cook in the oven for about 20-30 minutes.
11. Serve, tuck in and enjoy!
