Ingredients

1/2 cup grated Parmesan cheese
65g butter, softened
2 tablespoons mayonnaise
2 tablespoons lemon juice
3 tablespoons chopped spring onions
1/4 tsp salt
1 dash of Tabasco sauce
1 kg white fish fillets: Cod / Haddock
3 slices of cooked ham, torn into thin strips
Ciabatta Bread, thinly sliced

 

Method

01. Preheat the grill and grease a baking dish with a little butter.

02. In a bowl mix the Parmesan cheese, butter, mayonnaise, lemon juice, spring onions, salt and Tabasco sauce together.

03. Arrange the cod or haddock fillets in the prepared baking dish.

04. Grill the fish fillets for about 8 minutes in the prepared oven or until easily flaked with a fork. Remove from the grill and add your ham strips. Spread with the Parmesan cheese mixture over the fish and continue grilling for about 2 minutes or until the cheese appears to be bubbly and lightly browned in colour.

05. Lightly toast your ciabatta slices. Pop your toasted ciabatta on to a plate, take a scoop of your fish with grilled cheese and add to the top of your ciabatta.

06. Tuck in, enjoy!
