Brazilian Cod Curry
Brazilian food is a good mix of African, Portuguese and Native foods, including some from the Amazon.

Give this delicious cod curry a try. The mix of citrus flavours combined with spices sum up everything good about food.
Ingredients
Fish
500g cod fillets
1 tbsp lime juice
Olive oil
Black pepper
Salt
Broth
2 garlic cloves, finely chopped
Olive oil
1 large red pepper, sliced
1 onion, finely chopped
1tbsp paprika
1 tbsp cumin powder
Salt
1 tsp cayenne pepper
400ml coconut milk
400g tinned tomatoes
1 cup fish broth
1 tsp sugar
Finishes
Lime juice
Roughly chopped coriander
Method:
01. Combine the fish, lime juice, salt and pepper. Cover with clingfilm and pop in the fridge for about 15 minutes.
02. Heat a little oil in a large pan over a high heat and add the fish. Cook through until light golden in colour. Set aside.
03. Reduce the hob to a medium high heat and add a little oil. Add the garlic and onion and cook for about 2 minutes or until the onion starts to become translucent.
04. Add the peppers and cook for a further minute.
05. Add the remaining broth ingredients and bring to simmer, then turn down to a medium heat. Cook for 15 to 20 minutes until it starts to thicken, add salt and pepper to season.
06. Return the fish to the broth to reheat, about 1-2 minutes.
07. Add your lime juice and stir through. Garnish with a sprinkle of coriander.
08. Serve with rice. Tuck in, enjoy!
