For many, the start of the New Year usually consists of playing catch up at work, trying to get into some sort of fitness routine and eating healthier.

We can't help you with the first two but we can definitely help you with the third.

Who knew healthy food could be so delicious. Just look at these Asian Salmon Fishcakes. Tasty, healthy and super quick and easy to make.

Ingredients

1 piece of ginger

Lemongrass

500g salmon fillets

4 tsp chilli jam

Fresh Coriander

 

Method

01. Peel the ginger and finely chop, along with the lemongrass and some coriander.

02. Chop half of the salmon into chunks, about 1cm in size. Push to one side then chop the rest until really fine, almost like a puree, then mix the chunkier bits back with it.

03. MIx in with the coriander, lemongrass and ginger and then season with salt and pepper.

04. Divide the mix into 4 and then squash together into 2cm thick patties.

05. Place a large frying pan on to the hob with about 1 tbsp olive oil.  Cook the patties for about 2 minutes each side until golden in colour. 

06. Spoon the chilli jam over the fishcakes with a splash of water and turn the heat off. Jiggle the pan to coat the patties.

07. Serve sprinkled with a little fresh coriander,
