Italy…home of the pizza, meatballs and all those amazing pasta dishes! Carbonara is a well-known pasta dish consisting of white carbonara sauce, bacon and cheese however we like to switch things up here at Dockside! And it wouldn’t be us without any seafood, would it?

Ingredients

130 grams Smoked Mackerel Fillets

320 grams dried penne

40 grams Parmesan cheese

2 large free eggs

100 millilitres red top milk

1 large courgette

1 onion

1 lemon

2 sprigs fresh rosemary

Olive oil 

Directions

To begin, follow the instructions on the packet of your pasta to cook in a pan of boiling salted water.

While your penne is cooking, cut your courgette into quarters lengthways and remove the soft core. Then slice it at an angle, leaving at least 1cm width. After this, you should peel the onion and finish by slicing it finely.

Once this is done, you need to remove the bones from your mackerel and cut the fillets into pieces which are 1cm thick. You must then pick the rosemary leaves and chop them finely.

After you’ve done all that, heat a large frying pan over a medium heat with a drizzle of olive oil and a pinch of salt and pepper. Now, add your onions and chopped courgette—don’t forget to stir every now and then.

Leave them in the pan for five minutes, then add the rosemary and mackerel and cook for an additional five minutes.

While the rest of your food is cooking in the frying pan, you can be getting on with whisking the eggs and milk together. You should also grate the Parmesan cheese into the mixture.

Now that your pasta has cooked, you want to drain the water (keep a around 150ml left in the pan!) and add it into the frying pan with the mackerel and other ingredients.

Remove the frying pan from the heat for a short while and add in the reserved water from the other pan. This will cool the temperature of the frying pan down so that when you add your egg, it won’t just completely scramble it!

Now that the pan has cooled down a little, you need to quickly pour in the egg mixture and shake/stir together until smooth and thick. Also guys, please make sure your sauce covers everything equally…you don’t want any dry patches!

It’s serving time…woo! Finish each meal with a slight seasoning of salt and pepper and some garlic bread! You can’t go wrong. Bon appetit!
