Fresh, Peeled tiger prawns

3 garlic cloves, finely chopped

1 fresh green chilli

Fresh coriander leaves roughly chopped

Juice of 1 lime

1 tbsp caster sugar

3 tbsp fish sauce

6 spring onions finely chopped

1 red pepper, thinly sliced

2 cm piece ginger, shredded


Lime wedge to serve



01. Put the prawns in to a bowl.

02.  Grind the chilli, coriander, garlic and caster sugar and mix together. Add ½ the lime juice and the fish sauce then pour all over the prawns.

03. Heat 1tbsp of oil in a wok. Add the spring onions and ginger and fry for about 1 minute.  Add the red pepper and fry for another minute until the pepper starts to soften.

04. Add the soy sauce and a good grind of black pepper then add to the dish.

05. Heat the remaining oil in the wok.  Remove the prawns from their juices and add to the wok and cook for about 2 minutes until they turn pink.

06. Add the marinade to the wok and mix together then tip on to the peppers.

07. Squeeze the remaining lime over the dish and serve with rice.
