Bring the exotic vibes from the Mediterranean back to home, where they belong! This Mediterranean Red Snapper looks almost as good as it tastes and it’s a certified smash for you and your dinner guests!

2 Medium Red Snapper Fillets

1 can of diced tomatoes with juice

2 minced garlic cloves

1 chopped onion

Salt and pepper

Feta cheese (add as much as you like)

Before you begin anything, you must pre-heat your oven to 218°; we don’t want you waiting around for the oven to warm up while your food is just sitting there! After you’ve set the right temperature, spray a fairly-sized baking tray with cooking spray.

Once this is complete, you need to heat olive oil in a pan and then add your garlic and chopped onion to sauté for around three minutes. After this, it’s time to add your canned tomatoes and bring to boil—this usually takes five minutes or so.

Now to the best part, it’s fish time! Place your red snapper fillets in your baking dish and give it a little season with salt and pepper. Cover your fillets with the tomato mixture and whack them in the oven! You want to bake for around 10–15 minutes but we recommend waiting until whenever the fish is flaky.

After you’ve removed your fish from the oven, crumble some feta cheese over the top and garnish with whatever you fancy. We think some sweet potatoes would absolutely nail the job!
