1kg Potatoes (Maris Piper are our favourite for this dish)

25g flour

25g butter

400 ml milk

3 spring onions finely chopped

1 pack of Dockside fresh fish pie mix

Small bunch of chives - finely chopped

1 tsp English Mustard

Handful of petit pois

Handful grated cheddar

01. Pre-heat the oven to 180C (fan) / 200C / Gas mark 6.

02. Peel, chop and boil your potatoes for about 12-15 minutes until soft. Add a splash of milk and a knob of butter and mash.

03. Put the butter, spring onions and flour in another pan and heat on low until the butter has melted, stirring regularly. After about 2-3 minutes gradually add the milk and whisk gently.  Bring to the boil, keep stirring to avoid anything sticking to the base of the pan and avoiding any lumps and heat for a further 3 minutes.

04. Remove from the heat and add in your fresh fish pie mix, your cheese (leaving enough to sprinkle on top of the pie), chives and petit pois. Give it a good stir and then add to an ovenproof casserole dish.

05. Add your mashed potato to the top of the dish and sprinkle with grated cheese.

06. Cook in the oven for about 25 minutes or until golden in colour.

07. Plate up, tuck in and enjoy!
