Cod is most commonly known as the fish that’s used in the chippy. Not many people will have tried this fish partnered with anything else other than chips and let me tell you...they’re missing out!

Ingredients (Serves 4)

4 Cod Fillets

1 peeled and cored granny smith apple

1 fennel bulb

4 chopped dill sprigs

50 millilitres soy sauce

1 dash olive oil

40 grams sesame seeds

5 cilantro leaves sprigs

1 pinch salt

Lemon juice


Firstly, you want to start by placing your fish in a large baking tray to marinate the fillets in soy sauce. You will need to keep the cod in the sauce for 20 minutes but during this time, you can get cracking with the rest of the ingredients—you’ll also need to preheat the oven to 200°/gas mark 5.

Once your fish is left to marinate, begin slicing the fennel bulb very finely and then mix with a few drops of lemon juice, some chopped dill and a pinch of salt in a bowl.

After you’ve done this, put your sesame seeds under the grill and toast until golden. While your seeds are grilling, you can cut your apple into thin batons to then add to the bowl of other ingredients. Don’t forget to add your sesame seeds when they’re done!

Now your salad is ready, it’s time to get cooking! Use a small dash of oil on a large pan with a high heat to evenly sear your cod—it should only take around a minute on each side. Next, you want to place your seared fish in the pre-heated oven for three minutes. When you remove your fillets, let them rest for around four minutes so they can finish cooking through.
