450g squid rings (slice the body of the squid in to rings)

Oil for deep frying (neutral in taste) - coconut oil is ideal

2-3 cups of all purpose flour

4 tbsp semolina flour

4 mediium sized eggs

1 lemon cut in to wedges




01. Rinse you individual squid rings to clean under fresh water, use a paper towel to pat dry.

02. Using a pan with high sides (heavy in weight ideally) add your oil so that it's about 2 inches high in the pan. Heat the oil over a medium - high heat. 

03. Add the flour to a bowl, the semolina flour to another bowl and beat your eggs in a seperate bowl.

04. Toss your calamari rings in the flour first, then the egg and then the semolina flour.

05. Fry the calamari in the hot oil for about 1-2 minutes until golden in colour and crisp. Top tip: cook in several batches to avoid overcrowding the pan.

06. Using a slotted spoon, remove from the oil and place on a dry piece of kitchen towel to drain.

07. Season with a little salt (add a sprinkle of paprika and black pepper for an extra bit of yummy). Serve with the lemon wedges.
