Life is all about experiencing new things, like holidays to exotic countries, skydiving from 12,500 feet in the air or this bacon wrapped salmon recipe! Adding bacon to any meal always makes it ten times more delicious, however when you add it to Dockside’s Fresh Salmon Fillet…the flavours are out of this world!


2 Fresh Salmon Fillets (Skinned or Skinless)

4 rashers thin cut smoked bacon

Drizzle of olive oil

Freshly ground black pepper

2 Sprigs of fresh thyme

2 Lemon wedges


Before preparing any of your food, you want to preheat the oven to 200°/gas mark 6 and have ready a glass baking dish big enough to fit your salmon fillets.

After you’ve got that ready, place both your fillets in the glass baking tray and tuck the thinner end of your salmon under the thicker end. Proceed by topping both pieces with a sprig of fresh thyme.

Now you’ve done this, it’s bacon time! Wrap each fillet with two rashers of bacon. Make sure you stretch it slightly to cover most of the fish, then tuck the ends under the bottom of your fillet. Finish by drizzling with olive oil.

Place your glass baking tray in the oven and bake for 15-20 minutes—until the salmon has cooked through and the bacon is golden brown…and you’re done!

Squeeze some lemon juice over the top and serve. We recommend you serve with new potatoes and carrot mash—delicious!
