We don’t know what it is about bacon, but it just seems to work deliciously with our seafood! First we had the haddock, bacon and egg muffins, then the bacon wrapped salmon and now we’re bringing to you guys bacon crusted trout!


4 Fresh Butterfly Trout Fillets

50g breadcrumbs

2 rashers streaky bacon

2 thyme sprigs

1 lemon, zested (cut into quarters)

2 tablespoons olive oil


Before you start preparing any of your food, you must set your oven to 220°/fan 200°/gas mark 7. Once the oven is set, begin by slicing your bacon rashers into fine pieces. Then mix them together with your thyme, lemon zest and breadcrumbs.

Take a lightly oiled baking dish and place your fillets in. Use a quarter of the breadcrumb mixture to sprinkle over your fish and finish by putting the lemon wedges around the fillets with a drizzle of oil over the dish.

After you’ve done all this, you’re set to start roasting. Put your baking dish in the oven for 8–10 minutes. The top should be golden, and your trout should flake easily—that’s how you know it’s done! Serve with whatever you like and enjoy your meal!
